In particular, in countries with low-middle income, eggs’ market represents a fundamental source of sustainability for many families. Eggs are a high-quality protein but economically accessible to everyone, allowing every individual to provide a fundamental apport for a complete and balanced diet. They are also the source of protein with the lowest environmental impact as they require little water: the environmental footprint of an egg is 29 liters per gram of protein, a great saving compared, for example, to hazelnuts which require 139 liters of water per gram of protein.
